The Commis Chef plays a key role in supporting the kitchen brigade by assisting with food preparation, cooking, plating and maintaining high standards of hygiene and consistency — all while learning and developing culinary skills, especially in a vibrant spices‐based cuisine environment.
Key Responsibilities
• Assist in preparation of ingredients: washing, peeling, chopping vegetables; preparing marinades, spice mixes, sauces and other mise-en-place.
• Support the cooking and plating of dishes according to the restaurant’s recipes and presentation standards (especially dishes using bold spices, aromatic herbs, authentic regional flavour profiles).
• Ensure that food preparation and finishing is on time, consistent in quality and appearance.
• Follow the instructions of the Chef de Partie or Sous Chef for different kitchen stations (e.g., curry station, tandoor/grill, rice/biryani section, vegetable/side dishes).
• Maintain cleanliness, order and hygiene of your station/tray/area. Clear and clean equipment, utensils, surfaces as required.
• Assist in stock rotation, checking ingredient quality (especially spices, fresh produce, meat/fish), storing ingredients correctly (fridges/freezers), and minimising waste.
• Comply with all food‐safety, hygiene, storage and health & safety regulations (including allergy awareness, cross‐contamination prevention, proper cooking/storage temperatures).
• Be flexible with working hours, including service times (evenings, weekends, busy periods) and assist in service, clearing, resetting as needed.
• Show willingness to learn new cooking techniques, spice/ingredient profiles, menu changes, and continually improve your craft under mentorship of more senior kitchen staff.
• Contribute positively to the kitchen team, support colleagues, communicate clearly, and operate calmly under pressure in a fast‐paced environment.
