Yacon vegetable plants, easy to grow in full sun or part shade.
Yacon, (aka Sunroot), is a large perennial vegetable plant with flowers similar to sunflowers - see pic.
Looks like a Sweet Potato, it’s grown for its roots/tubers which are HIGHLY nutritious.
Low sugar content so safe for diabetics.
They have a crisp texture and sweet taste, similar to apples, melons or pears.
MANY uses in sweet treats or savoury dishes -
Chop or slice and eat raw in salads.
Make a nutritious tea drink with the leaves.
Can be juiced.
Can be steamed, boiled, baked or roasted.
Slice thinly to make chips.
Add to stir fry dishes.
Shred and add to pineapple and peppers to make coleslaw.
Make syrup for a low calorie sweetener.
Make vinegar, soup, sauces, chocolate or flour with them.
