Jarred in early August 2025, foraged by the bees over June & July - Main source of nectar locally (Central Stirling, FK8 area) at that time is the Linden Tree (Commonly known as Lime tree) which gives this honey a refreshing flavour. Water content tested at c18%.

This honey is 100% natural and has not been heat treated. (Supermarket Honey is typically heat treated meaning it stays runny)

All good quality honey will granulate in time which is a sign of unadulterated honey. If you prefer runny honey you can reverse the process by gently heating the jar in a saucepan of water until it returns to its natural state.

Bees collect nectar from many different plants. This makes every jar of honey slightly different and therefore they will granulate at different rates. Generally, spring flowers provide nectar that is rich with glucose sugars which produces honey that granulates and sets quickly. Summer flowers generally provide nectar rich with fructose and honey remains clear and runny. But as bees will visit many different plants some honeys may have near equal amounts of glucose and fructose, meaning granulisation can start anytime.

Note that trading standards encourage honey is sold with the warning: "Unsuitable for infants under 12 months" as a precautionary measure against infant botulism.
