One of London's leading catering and events companies has a job for an Executive Sous Chef to start ASAP. The Executive Sous Chef will be working closely with the Executive Chef and Head Chef in running the kitchen, and will oversee the three Sous Chefs, and the large brigade of freelance and agency Chefs. The kitchen is extremely busy, and in the run up to Christmas, they will be doing up to about 40,000 covers per week. The events that they do range from large and small corporate events, weddings, smaller private parties, as well as large parties at various venues around the capital.
 
Overall, the Executive Sous will be responsible for the full operational productivity of the unit and its operating standards. This will include overseeing all food safety and operational healthy and safety requirements as well as any business needs. The Executive Sous Chef will need to ensure food quality and freshness is of the highest quality at all times as well as monitoring and coordinating all sections within the kitchen, which will include the staff canteen. More specific duties include:
Adhering to the company Food Safety Policy, ISO documents and Health and Safety Policy
Ensuring the department is run to the required staffing levels in line with the budget
Deputising for the Head Chef in his absence
Overseeing all food preparation and ensuring the correct preparation for the clients is maintained
Ensuring all Chefs are in the correct/required uniform as set out by the departmental standards
Managing consistency and quality in food taste in line with menu specifications, recipes and photos
Attending weekly operational meetings and evening debrief meeting as is required
Working with the Executive Chef and the Head Chef to maintain kitchen organisation, staff ability and training opportunities
Monitoring all Chefs' and Porters' working hours, noting punctual and self-managed time keeping
Having a good understanding of the company's HR policies and procedures
Carrying out any reasonable tasks as required around the business needs, as requested by the line managers
 
The right Executive Sous Chef will have the following experience and attributes:
Formal Culinary Training
At least three years' kitchen experience
Previous Production and Event work
Strong organisation skills
Good foundation of Health and Safety as well as Food Safety
Training to Level 3 Food Safety Management via NCASS
Good management skills
Self-motivated
Highly developed attention to detail
Ability to work under pressure to deadlines whilst delivering numerous events on time and on budget
Flexibility to travel and work longer hours as require
Well presented
Creative, with good eye for detail and presentation
Excellent written and verbal communication skills
Personable and outgoing
