Description


Responsible for the management of all aspects and functions of the bar outlets in accordance with the hotel standards, ensuring a highly professional and efficient standard of service is provided to our customers. Additionally, oversee hygiene and safety regulations. Motivate and lead the department as part of the wider hotel team in order to promote a positive, first-class image at all times.

Duties & Responsibilities

• Responsibility for effective performance management and training of bar team
• Ensure Health & Safety, Hygiene Policies are met at all times
• Monitor and maintain cleanliness, hygiene and organisation of bar areas.
• Establish par levels for supplies, liquor, beer, wine and equipment. Complete requisitions to replenish shortages or additional items as required
• Manage ordering, inventories and stock levels within the operation.
• Responsibility for the creation of cocktail menus and Update menu changes on the Point of sale (POS) terminal
• Regularly check storage areas for proper supplies, organisation and cleanliness.
• Review sales and beverage costs for previous day; resolve discrepancies with Accounting. Track actual against budget.
• Conduct pre-shift meetings with staff and review all information pertinent to the day's business.
• Inspect grooming and attire of staff; rectify any deficiencies.
• Inspect, plan and ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel.
• Prepare weekly work schedules in accordance with staffing guidelines and labour forecasts. Adjust schedules throughout the week to meet the business demands.
• Ensure that staff report to work as scheduled. Document any late or absent employees
• Ensure all new employees complete induction to the hotel and are provided with appropriate training to be able to carry out their duties

Qualifications

• 5 GCSE grade A-C including maths and English or equivalent
• Food hygiene and appropriate HS&E & First Aid accreditation/certification
• Fluent written and spoken English

Experience

• 3 + years hospitality management experience in AA four-star/luxury hotel
• Proven track record of effective leadership/management
• Competent and experienced in stock management process and procedures
