Relaunched in 2015 under new ownership – this high end food-led West London Gastro pub is a real gem, popular with locals and destination diners alike.

Offering a weekly / monthly changing gastronomic range of seasonal modern British dishes showcasing the best produce available - ingredients are sourced from small artisan and farm suppliers to ensure quality and provenance. Robust simple cooking with flair plus traditional Sunday roast and small plates on the bar. All made in house including butchery, smoking, game, nose to tail, slow-cooking, baking.

Vibrant relaxed atmosphere and a strong, committed Management team in place. Open for lunch and dinner Monday to Sunday, this beautiful pub is also popular for private parties and exclusive hire.

Kitchen hours: lunch from noon to 3.00 pm midweek / 4.00 pm on weekends; dinner from 6.00 pm / 10.00 pm
Approx. £10,000 to 15,000 weekly net food sales

Role Description

Supporting the Head chef in all aspects of kitchen management; duties include:

Collaboration on weekly / monthly menu planning (seasonal gastro / AA Rosette dishes)

Deputising, running service, team direction & organisation, maintaining high food quality & service standards

Food ordering, stock management, monthly stock audits, maintaining 70% GP target

Supporting team hiring, team training

Daily kitchen admin, compliance files & kitchen maintenance

Planned 2018 / 2019 new openings with Head chef opportunities from 6 to 12 months onwards (Head chef in Waiting programme)

Desired Attributes

This role would suit a confident, creative and experienced Sous Chef with a background in quality / rosette level kitchens who is looking for Head chef progression.

A Chef with lots of energy & drive; good knowledge of current food trends; strong organisation & training skills; quality & standards focused.

Salary & Benefits

£11.00 phr (£28,000+ basic equivalent) & est. £3,000+ tronc allocation per annum (paid on 4-weekly pay cycle / 13 payments pa)

Live in accommodation available (£50 deduction per week)

Permanent contract subject to standard 3 months probationary period; regular salary reviews; courses as required; excellent development & progression opportunities (movement within the group); 28 days paid annual leave; 5% workplace pension; staff discounts; team excursions & FAM trips re: suppliers; laundered uniform & meals on duty

Approx. 48 – 52 hrs p wk / 7 shifts over 5 days incl. Weekends
