Well established privately owned food based country pub with an award winning 2 AA Rosette restaurant that features regularly in the Michelin and Good Food Guides and a bar that specialises in Micro brewery real ale and boasts an extensive fine wine list is seeking a talented and well organised Sous Chef to help run the kitchen. There is a modern commercial kitchen that features Charvet ranges and Rational ovens. The pub offers a choice of menus including light meals, bar snacks and full a la carte dining; there is a strong Sunday Lunch trade. All food is fresh, prepared on site from scratch and cooked to order and the kitchen takes full advantage of the best local and organic produce available. Menus are Modern European and seasonal and include a Chef’s menu of the day, standards are high. The kitchen team is young, talented and dedicated. As Sous chef you will be expected to run your own section, supervise other staff and stand in for the Head Chef in his absence.
You must have strong all round kitchen skills, be at home in a busy fresh food environment and have a good understanding of kitchen management including stock control, ordering, health & safety and hygiene.
You must be well organized, even-tempered, flexible, hard working, customer focused and above all love your work. The new Head Chef has Michelin star background; leads by example, expects a lot from his brigade and is keen to find a strong Sous Chef who can make a real contribution to the kitchen team.
