About Us

We are a small country pub situated in the Village of Hillesley, approximately 2 miles from Kingswood, 2 miles from Wotton Under Edge and 25min drive to Bath, Bristol or Stroud.

The pub has a dining room that comfortably seats 30, a bar area that seats 16 (plus standing area) and a snug that comfortably seats 18. The pub also features a large enclosed garden and further seating to the front of the pub.

Within 15 months of opening we have won the local CAMRA pub of the year. Our vision is to remain a Community Pub with great beer, friendly service and a great pub menu that consistently delivers tasty food at reasonable pub prices. We are not a gastro pub, but we expect every dish that comes out of the kitchen to be of the highest standard. We cater to locals, real ale enthusiasts, tourists (we are only 5 mins from the Cotswolds Way) and we are also establishing ourselves as a destination pub.

Currently our kitchen is open Lunchtime Thursday to Sunday, Evenings Thursday to Saturday. Our mid week lunchtime menu is very simple, whilst we have a more extensive pub menu in the evenings and a Specials Board.

Job description

We are looking to engage a team of energetic and enthusiastic individuals comprising of Cook/s, Kitchen Assistant/s and Bar and Waiting Staff to a join us. These are not live in positions so candidates will require their own transport or live locally.

Cook/s

Job Purpose:

Serves meals by reviewing recipes; assembling, combining, and cooking ingredients; maintaining equipment, inventory, and a sanitary kitchen.

Duties:

* Plans meals by analysing recipes; retrieving and ordering ingredients.

* Prepares ingredients by following recipes; slicing, cutting, chopping, mincing, stirring, whipping, and mixing ingredients; adding seasonings; verifying taste.

* Completes meal preparation by grilling, sautéing, roasting, frying, and broiling ingredients; verifying doneness and taste; assembling and refrigerating cold ingredients.

* Presents meals by placing and arranging hot and cold elements using plates, dishes, bowls, and baskets.

* Controls costs by adhering to recipes; following preparation standards.

* Maintains a sanitary kitchen by adhering to state and local sanitation, storage, and refrigeration requirements and codes; cleaning equipment.

* Maintains supplies inventory by checking stock; anticipating needs; placing and expediting orders; verifying receipt.

* Keeps equipment operating by following operating instructions; troubleshooting breakdowns; performing preventive and cleaning maintenance; calling for repairs.

* Updates job knowledge by participating in educational opportunities; reading professional publications; maintaining personal networks; participating in professional organisations.

* Accomplishes organisation goals by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.

 Salary   will be based on Experience and Qualifications

Career level required    a catering qualification would be preferred, Food Hygiene Certificate (level 2 minimum)

Assistant Cook/s

You will be responsible for preparing food as directed by the cook, plating dishes in an attractive way, and ensuring the quality of different dishes.

Job Purpose

To undertake, normally under the general direction of the Cook, operations connected with the preparation and cooking of meals.

Main Areas of Responsibility

  • To act-up in the absence of the cook.
  • To assist the cook in the preparation and cooking of meals.
  • To assist the cook in maintaining high standards of food hygiene and cleanliness in the kitchen in accordance with HSS domestic and catering standards.

Contacts

  • Daily contact with other employees. Occasional contact with suppliers of food and kitchen maintenance contractors. May also involve some contact with customers

Knowledge, Experience and Training

  • Food Hygiene Certificate (basic)
  • Relevant experience working in the catering industry.
  • Knowledge of health and safety good practice in the kitchen.

Problems and Decisions

  • In the absence of the cook the postholder would need to take over the duties and responsibilities of the cook.

Physical Effort

  • Continuous lifting throughout the shift, stacking foodstuffs at higher and lower levels including fridges and freezers, lifting large cooking utensils and moving heavy kitchen equipment.

Working Environment

  • Frequent exposure to high temperatures and steam.
  • Contact with hot substances, ovens and hot plates.
  • Use of dangerous equipment knives, fryers etc
  • Exposure to periodic loud noise from dishwashers and other kitchen equipment.

Salary    GBP 5.6 - 8 Hourly rate

Bar and Waiting Staff

We are looking for friendly and confident bar and waiting staff that are hard working and able to communicate with a broad range of customers.  Multi tasking is an inevitable part of this role particularly when the bar gets busy.

Main Areas of Responsibility

  • To serve customers food and drink as per your induction
  • To operate an EPOS till system
  • To be aware of bar stock and to replenish as required
  • To consistently ensure that glasses are washed and replaced
  • To ensure that bar and customer areas are kept clean and tidy and serviceable
  • To assist with setting up and closing down procedures

  • Daily contact with customers. Contact with other employees. Occasional contact with suppliers and other contractors.

Knowledge, Experience and Training

  • Food Hygiene Certificate (basic) preferred but not essential
  • Relevant experience working in hospitality preferred but not essential
