I am a 34yo senior level Italian trained chef with experience in International cuisine: I am enthusiastic, creative and fully qualified, extremely skilled at reproducing the traditional and rustic dishes from Italy, creating new combinations and experimenting while being careful not to compromise the freshness and originality of the food i prepare.
I achieved Courses at the Walnut Hill Culinary society of Philadelphia USA and Bachelor in Business Administration.
14 Years of Experience in the restaurant field; fresh cooking, fine dining and bistros, fresh pastas, fresh breads, fresh specials everyday in high volume and fast pace: Complete in all aspect of financial administration of a kitchen and staff, controlling GP and stock.
I enjoy leading and motivating large group of staff members and pass on the passion and the skills required by the job.
