Sous Chef wanted for 4 Boutique Hotel
·To facilitate the development and training of kitchen brigade. To ensure the consistency and standards set relating to food production is met as per Head Chef’s requirements.
·Support the Head Chef in achieving highest quality standards and exceed business targets.
·Comply with and understand the Company Handbook and policies.
·To assist the Head Chef with planning, menus, rosters, ordering, receiving and checking of deliveries and any other relevant bookwork and administration.
·Meet or exceed food gross profits as set out in the budgets. Minimise and record wastage.
·Maintain food stock figures, ensuring the Accounts department receive delivery notes, credit notes, requests for credit notes and all relevant paperwork, in the correct week.
·To ensure the security of stores and any other areas of potential loss.
·Ensure produce purchased is to the specified quality and at the best price.
·Ensure efficient production of all meals and services at the required times.
·All goods received by the kitchen must be checked and signed against the ordering sheet for condition of food items, before placing into correct storage. All purchases must be made using the specified nominated suppliers.
