·To ensure that the highest level of service is provided to all guests and clients of the hotel to maximise guest satisfaction.
·To be aware of the licensing regulation, including weights and measurements, under age drinking, drinking up time and food handling regulations.
·To ensure all necessary F&B administration is carried out, specifically, officer’s checks, wastage and breakages.
·To maintain and increase the profitability of the F&B operation, up selling driving sales for the department.
·To be fully conversant with mybar menus and wine list.
·To ensure all menu specials and dish of the day are known each shift so that customers are properly informed.
·To ensure that all control procedures pertaining to the processing of revenue are adhered to at all times, and any discrepancies are reported to the Head Bartender / Food and Drink Manager immediately.
·To maintain the presentation and cleanliness of the bar area including the Terrace and the Still Room.
